15. The "Great Gretzky" a.k.a. Nürnberger Poutine





Okay, I admit this one wasn't planned.*Think*

I actually ate it this Tuesday evening (5/14) after arriving in Nürnberg for business, at a local burger restaurant called BurgerHeart.

It's from a selection of Canadian Fries, 5 variations of loaded fries in the tradition of the beloved Canadian "junk" food, "12. Poutine!.

The options were Fryan => Adams, Reynolds, Gosling, Gretzky and – very funny! – Scherbatsky (HIMYM, anyone?).*Wink*

Okay, "Wayne" and "Robin" broke the "Fryan"-pattern, but who's pooping currants? Right, only German nit-pickers! *Angelic*

Anyway, after studying the menu, I decided (of course!) for the Great Gretzky – woulda been a more fitting name, eh?*Wink* – and wasn't disappointed. *Hungry*

This is a very simple dish you can make with fresh ingredients in a reasonable time.*ThumbsUpGreen* It's well-carbed because of the potatoeswhich don't even need frying, so healthier! – and topped with a refreshing ranch sauce, and savory cheddar and fried bacon cubes.*StarStruck*

What's not to like, eh? *Think*

AND, since it's Hockey WC *Hockey**HockeySkate**HockeyHelmet**HockeyPuck*, it's a great dish for "high performing fans" like my Humble Self – dudes, it's really hard to catch goals in real time (not in slo-mo!), but I managed by now. *ThumbsUpGreen* But that makes hungry – brain needs a lot of energy for that "trick"*Pthb* – and this is the cure.*Hungry*

Serves: 1 portion

Prep Time: 1 hr

Degree of Difficulty: Easy



WE NEED


450 gr / 1 lb.
(primarily) waxy potatoes Peeled they're minus 3.5 - 4 oz. and about the amount of 1 baking tray*Idea*
salt
1(-2) slice(s) Irish cheddar
40 gr / 1.5 oz. fried bacon cubes


Sauce


90 gr / 3.2 oz.
mayonnaise local Dijon here
90 gr / 3.2 oz. yoghurt Greek yoghurt, unflavored/-processed, with 10% fat
90 gr / 3.2 oz. buttermilk
1.5 tbsp lemon juice Yeeees, from a real lemon.*RollEyes*
1 - 1.5 tbsp Dijon mustard
2-3 green onions

1 bunch fresh / 40 gr / 1.5 oz. frozen herbs Used a frozen mix of 8 herbs: parsley, dill, cress, chervil, chives, sorrel, borage, pimpinella

4 (2)
small (big) garlic cloves More, if you fancy it. Remember! Garlic's one of the highest-carbed vegs!*Angelic*
salt
pepper




WE DO


Fries

1. Preheat
the oven to 180°C / 350°F fan and line the oven's grill rack with baking paper. So the fries are more evenly baked.*Idea*

2. Peel + cut the potatoes into fries / wedgesmine became a mix – and line them on the grill rack.

3. Bake until golden-brown => browned but not burned.*Idea*, about 20-30 minutes. Keep an eye on them! Since ovens are individuals, this can take longer / shorter!*ExclaimR*


IN THE MEANTIME:


Gently Fry the bacon cubes. You don't want them burned*ExclaimR*


while you make the *Down*


Sauce

1. Put
mayo, yoghurt, buttermilk, mustard + lemon juice into a bowl and whisk until smooth.

2. Clean, wash + cut thinly the green onions. Wash + shake dry, pluck + finely chop the herbs/leaves.
Peel + finely chop the garlic.

3. Add green onion, garlic + herbs to the sauce and

4. Season to taste with salt + pepper.



AFTER THAT *Down*


Crumble / finely cube the cheddar. Try to get the Irish one; the orange is a nice dash of color.*ThumbsUpL*



Poutine!



When the fries are ready, pour them into a deep plate, and salt them. As my late Dad already knew: unsalted potatoes are God's Punishment (because tasteless).*Shock*

Sprinkle
several tablespoons – I used about 4-5 – over the fries and the cheese + bacon crumble on top.
