I agree that with fantasy you can definitely use all kinds of animals, whatever works best in your world. I read published books about shifters that included dragons, phoenix, falcon, wolves and a bear. I've even seen a story where a shifter character was a horse when in animal form. That is just one element of fantasy.
There are a fair number of epic fantasy that have dragons or other mythical creatures but often they use horses for travel or might have a house cat. Think you'll be just fine. There are a couple writers on here who have a fondness for dragons so if you ever want to test some stories or scenes out I can recommend a contest or two.
