A recipe for a Holiday family favorite
Zucchini Bread or Cake


Preheat oven to 350 degrees.

Ingredients:

3 cups grated zucchini
3 cups flour
3 cups sugar
3 - 4 eggs
3 Tbl baking powder
1 tsp salt
1 tsp soda
2 tsp cinnamon
3 Tbl vanilla
1 cup chopped nuts, if desired (I use pecans).

Mix:

zucchini, eggs, oil, sugar, and vanilla together

Mix: dry ingredients

Add: zucchini mixture, 1/4 at a time, beating well after each addition, to flour mixture

Add: chopped nuts

Bake: in greased, floured pans at 350 degrees for approximately 45 minutes to an hour.

NOTE: for non-fat quick breads, substitute 1 ½ cups fat free plain yogurt for 1 cup oil, can’t tell the difference in taste.

Icing: Cream Cheese Frosting -


8 oz. package cream cheese
1 stick margarine or butter
3 cups confectioners sugar (powdered sugar)
1 tsp vanilla
½ to 1 cup chopped nuts, if desired

cream cheese and margarine/butter, add vanilla, then add sugar until desired thickness.
add nuts.

Frost cooled bread or cake.
