I find Roman history pretty interesting as well. Most history I find interesting to one degree or another. But Roman and early Byzantine history (pre-Muslim conquests) is of higher-than-average interest to me.
Music theory: Your mileage may vary according to what you listen to. I listen to classical music, so theory is more applicable, probably, than to pop music. OTOH, once you become aware of the fact that so much contemporary pop music is (infamously) the same four chords over and over, knowing those chords and the pattern that uses them might make it intolerable.
I didn't learn to "hear" more in the music I listen to. It just made me more environmentally aware of it. Nowadays I listen to tracks of thunderstorms or the surf while writing.
