The cyclopes and the minotaur were generally assumed to be male, but there is no reason why there cannot be female versions.
Surely there were cyclops women, even though the stories did not mention them. Their capacity to eat would be greater than that of a normal human.
And there was nothing stopping the minotaur of Crete from breeding with any of the women sent to him as a sacrifice. Theseus killed King Minos's pet minotaur, but there may have been offspring left behind. For the sake of this story we can assume that at least one creature survived with the head of a cow and the body of a formidable woman.
