There's Crash Bandicoot. It's one of the series that took inspiration from Sonic the Hedgehog, but went on its own path. Sure, there's reboots, but it also uses alternate universes and timelines, so all are canon and noncanon at the same time.
Little Tail Bronx is a shared universe of a few games, Tail Concerto, Solatorobo: Red the Hunter, and Fuga: Melodies of Steel. It uses airships, mecha, and ruins of long past. The cast is a mix of Dogs and Cats as the descendants of Humanity.
Rocket Knight Adventures is another series inspired by Sonic. This one has rocket-propelled knights fighting mecha. It still has fans and it did get another game back in 2010 and a release of the two genesis games and the SNES one.
Freedom Planet is also inspired by Sonic, but also Gunstar Heroes and Mega Man Zero.
