Dr. Smith didn't even need a student assistant that bad, she was actually doing a study that she found very, very risky. She wanted to get actual firm data on the role weight plays in young adult social society. Now, one portion was to be done with blind surveys of people, but she wanted to supplement this, and that's where Madison came in. Dr. Smith wanted to do a non-empirical first hand study. She figured she could cause Madison to gain weight, and through observing her and talking to her, see what the consequences of that are. Now, this idea did have it's flaws. The research wouldn't be as valuable as the surveys, since Madison was a survey size of 1, and there was no way to see how the interaction would differ if Madison hadn't gained weight, but Dr. Smith still found this idea intriguing. She was also being reckless, if this got out before she published, or even after, she could get fired from the university.
Dr. Smith also knew that her whole career going forward stood on making it look like Madison had consented to this project. If she couldn't do that, she would be exposed for massive ethics violations, and probably never be able to teach again at any respectable university.
