A few ideas.

A) Sunset Shimmer acquires the power to grow by absorbing the energy of others when she tries to regain the use of her magic after arriving in the human world. Either after stealing the element of magic or after when she first arrives through the portal.

B) When Princess Twilight chases Sunset through the portal, her alicorn magic reacts to her new body by growing for some reason. Perhaps a reason Sunset tries to discover and use for herself?

Or

C) The element blast that cleanses Sunset of her darkness has a secondary effect on one or more students at Canterlot High. A growing effect.
