She appeared in Mario Kart 8 and is a metal version of Peach. She has a echo-y voice and the metal she's made of is what her names implies, pink gold.
However, she may or may not be another version of Peach. She might simply be Peach under the metal hat powerup. Then again, Nintendo flipflops about if Metal Mario is a desperate character for the racing games, so for plot purposes, go with Pink Gold Peach being her own character.
As for her personality, there doesn't seem to be much of a change between Peach and her metal doppelganger. But that might change in future games. She'll probably become more cocky, much like how Metal Mario kind of became.
