What about, instead of poker, it's a new version of the "Spoons" card game where you write each player(except the dealer) writes a trait and their name a on piece of paper and grab those when the hand's over, rather than spoons. Then everyone ends up with whatever trait they happened to grab. That way, no one will know what trait they will end up with in the end. Also, even though the dealer doesn't write a trait, they can still end up with someone else's trait by grabbing a piece of paper before someone else does once the hand's over, and if someone happens to grab their own trait, they can take that trait from the loser(the person who didn't grab a paper in time).
