Gabby Ortiz: Newly hired waitress; 25; rebuilding her life after a breakup
Mike Stewart: Counter man and de facto manager; has worked at the diner longer than anyone; pleasant, but becomes stressed when in a situation where he has no control
Ed Lewis: Cook; nonbinary; alternates between men's and women's clothing, adding jewelry on days when they want to feel pretty; capable of cooking anything customers find on the menu
The radio: plays music appropriate to whichever time period the diner is in that day; sometimes plays songs which are apropos to whatever the person who walked in is going through, though this may not be obvious at first
