The whole freedom thing... You could always use a pen name if you switch genres. Lots of authors do it.

As for the contract, in all likelihood, you'd only be contracted for the one book and would have to look for a publisher for your second book regardless of the genre. The first book would just open doors a little easier for you the second time around.
