The "Save and View" is not available on the Quick Edit/Create because of the pop-up window nature of this tool. It's available on the regular edit and create because those are both done in a normal window.

So, to handle the viewing when using the "quick" functions, you should just open a regular window with the item and reload/refresh it as you make changes.
