Even though we may feel bad about offending someone inadvertently, once you apologize you have to let it go. There are far too many people who go around looking for something to take offence with or someone to vent their spleen on.
There are people out there who use their 'poor me' attitude to get attention.
As to being offended by what someone says, it is entirely up to you whether you take offense: it really is a choice.
