Plain food is the best, as you process (/ grow) it yourself.. Already my Oma (grandma) said, When I don't recognize it as something I'd eat/cook, it's crap.
I'm impressed how informed you're on American diet, food processing, etc. Sadly, never was I physically feeling that bad as when traveling the US (because of that "diet"). Most people just suffer and don't go beyond. (Stephanie Seneff's Toxic Legacy & Dr. Robert Lustig's Metabolical were really eyeopening books for me.)
Glad it's not celiac - I have a friend who has it and is bread-/pasta-/etc. lover (nope, not me), and she needed an eternity to find the right ingredients to indulge in her culinary "vice".
