I sometimes do home-made toffee, but haven't done for a while. My old sugar thermometer broke, and the new one I got looks like the radar gun the police use in speed traps. You just point-and-click and it tells you the temperature. I should get it out sometime and have a go. My three most popular toffees are plain, treacle and licorice.
I once tried home-made hard boiled sweets, but I didn't take the sugar temperature high enough and so they turned out chewy. I'm always wary of chewy, having removed a couple of crowns in my time. The look you get from the dentist when you go to get them reattached...
