Ash has had many female companions throughout his adventures, so this is where they will go. I know the games have female playable characters with names, and there are also plenty of Gym Leaders, Elite Four, Champions, and other trainers in the games and anime to choose from.
If you want to write about a character that you don't see, feel free to create an option.
Important Notice: Many Pokemon related options are dangerously implied to be or are outright pedophilia, but in the context of Pokemon with the sex-crazed Brock being fine to show on children's TV, I think there can be some leeway. Still, I would urge you not to focus on and sexualize the fact that they are young. People who enjoy that can go ahead and fantasize, just don't make it completely evident in what is written down.
