Option1: Curse of the black pearl when jack &elizabeth are on that island, Elizabeth finds something and hands it to jack and at the moment both their hands were touching the object it glowed which causes the bodyswap to happened and the chaos(not bad chaos but more like the comedic kind of chaos) that ensues from this event
Option2: Post Curse of the black pearl, Will breaks off his engagement to elizabeth to search for his father and elizabeths father is having suitors coming for his daughters hand in marriage which makes her stressed and contemplates running away but she doesn't know where to go when her mind instantly went to jack sparrow and while she would rather not talk let alone think about jack sparrow but she envies him as he isn't locked in a "cage" so she could join him on the black pearl if she does leave home, she feels asleep with her thoughts of jack still in her mind
~with jack~ Jack is looking over several maps and his precious compass when his mind goes to elizabeth wondering if the whelp has married her or if he has done something stupid to cause elizabeth trouble so he decides to either continue on his way as he is or head towards port royal to see if elizabeth & the whelp are married so he falls asleep while contemplating that decision
Option3: Dead mans chest when they visit tia dalma, elizabeth picks up an object with jack noticing so he tries to grab her hand before she picks up the object but is too late as she already picked it up as Jack's hand reaches hers which causes the object to glow a little bit as they swap bodies
