You Need Those Cookies WHEN? by Marilyn Mackenzie School is back in session in many parts of the U.S., and moms all over the country will be faced with the cookie problem. Junior, while dillydallying over his breakfast, will mumble, "Mom (chomp, chomp), I forgot to tell you. I need to take some cookies to school this morning." Yes, you read that correctly. It's 6:30 a.m. and your ten year old kid has just announced, "Mom, I have to bring a batch of cookies to school today." You're fresh out of ingredients, or so you think. What do you do? Haven't we all been in this same position? Our kids must think we are miracle workers! Well, go ahead and prove them right. Here are three recipes for cookies using ingredients that you just might have on hand. Be sure to keep these recipes on hand for your next emergency. Bake and enjoy! Recipe #1 Easy Peanut Butter Cookies 1 cup peanut butter 1 cup sugar 1 egg Mix all ingredients together. Bake at 350 degrees for 10 to 15 minutes, or until well done. Recipe #2 Potato Chip Cookies (Really!) 4 ounces Potato Chips, ridged 1 pound Semi-sweet Chocolate 2 Tablespoon Shortening (melted) Break up chocolate into small pieces in the top of a double boiler. Melt over simmering water. When the chocolate is soft to the touch, stir gently with a dry spoon and add the shortening, stirring until smooth. Keep the chocolate over low heat while dipping. Line 2 baking sheets with wax paper. Place 1 chip in chocolate deep enough to cover it. Use a 2 pronged meat fork to lift the chocolate coated chip out of the chocolate and tap gently against the side of the pot several times to remove surplus chocolate. Place on the wax paper to dry. Repeat for all chips. Recipe #3 Easy Cake Mix Cookies One box of any cake mix Half cup oil 2 eggs Mix together. Drop on a cookie sheet and bake At 360 degrees for 10 to 11 minutes. Ice if you wish. Use any type of cake mix available. Now, wasn't that easy? Surely you have some of these ingredients on hand! The next time you are shopping, though, you might just want to pick up a roll of that refrigerated cookie dough. You just never know when the kids will announce, "Mom, I need cookies for this morning!" |
