I really like the overall style and flavor of this western piece. It reminds me of old irish or early western songs, like Sweet Betsy from Pike, with a decidedly Johnny Cash flavor with the gallows jail humor. I'd say give it a chorus. I play guitar and would want some hooky riff and chorus with a slightly more complicated rhythm that breaks up the rhythm of the verses and plays on the eating/fat/broken neck escape angle, maybe contrasting it with the excesses of his partying in the streets that got him in prison to begin with, and then the partying in prison that got him back out of it. I'd put the chorus in after the second, fifth ninth and 11th verses - with slight variations if needed in each chorus to expound on the theme that excess can certainly get you in trouble, but sometimes, funnily, it can get you out of trouble too.
