I completely agree about incorporating more traditional elements like soul binding. There's been some stuff like that in Constatine comics (Hellblazer), but for the most part, we definitely get shambling "Walking Dead" style zombies. Where it's more a virus than a purposeful binding of the flesh through ritual.
I feel like, so long as you are respectful of the fact that Voodoo is a sincerely held collection of beliefs and not just a story framing device, taking a few liberties is totally cool. Sometimes people fetishize Voodoo, though, as if the beliefs are inferior or ridiculous and I find that problematic. It's so ridiculous.
