Yes, I'm eating more carbs in form of wholegrain bread, oats, fruit and veg, also for breakfast. I also found out why I'm so obsessed with sweet potato, Hokkaido pumpkin and garlic, which I use amply in my WDC cookbooks, too. They are the vegs with the most carbs per 3.5 oz. (the reference amount in Germany). For example, on the weekend I made Roman semolina gnocchi. Semolina consists 3/4 of carbs And, as said, the greedy little poop in our head hoovers up 5 oz a day just for itself, body not even included. And muscles need glucose, too, so we're able to move at all. Concerning the anxiety: I was thinking it was due to emotional stress because of the decluttering, and me being unable to get rid of stuff my brain wanting to keep the status quo. I realized that my brain indeed wants a certain status quo... namely the glucose it needs to function. Now that it gets it, it quietened. Sure, I gained 2 pounds, but that's normal. The brain doesn't trust me yet to keep at the new nutrition and builds an emergency stash in case I fall victim to the "Unholy Trinity" again. BUT: on top of the already mentioned improvements, my digestion normalized from 2-3 days to daily. Period's not so heavy and painful. Sport not so hard as I focus more on moving slower in the strength portion to not strain my weakened muscles even more and move towards more cardio (ergometer, back muscle training circuit). Most of all, my fear didn't come true: I don't eat carbs unrestrained, but rather the amount my body would've eaten anyway, if I'd let it in the first place. Which would've still been too little to optimally feed myself. Go figure. Oh, and I made a batch of "8.
