Heh, I'm gonna be niche here and say my own profession - timetabling (for a university).

Very small team scheduling thousands of events into too few rooms, trying to make a fair timetable for students while also trying to cater for lecturers' expectations and wants and needs (all of whom think their course is the only one being offered).

I have been doing it for 20 years now and the lack of general respect is still a thing.
